How would I say this in spanish?

There are different ways to say it in Spanish. But from what I derive from the way you put it, I would say that in Spanish the best way to say it is: "� Eres tan linda(o)! �Te amo!". But like I say, you could also say "Eres tan y tan bella(o). Te amo". Or you may go a little further and say "Eres preciosa(o). Te adoro". Or merely "Eres muy bella(o). Te amo".
